Jada Kennedy cooks Southern food on YouTube, on a channel called The Southern Way. The recipes in this manual are the ones from her videos: ribs, mac and cheese, meatloaf, sweet potato casserole, potatoes, shrimp and grits and pound cake.

No. Chapter 8 gives an oven version of the same method: the same membrane, binder and rub, a low oven, the same wrap and rest. The smoker chapters are there for anyone who has one.
It is written for you. Every recipe goes step by step and gives the reason for each step, says what “done” looks like, and has a table of what to do when it is not. All you need beyond the ingredients is a food thermometer.

The safety figures in the book are taken from USDA guidance: safe internal temperatures, the two-hour rule, thawing and leftovers. They are listed with their source in Chapter 3 and Appendix A. Check fsis.usda.gov for the current chart. The book also separates safety minimums from tenderness targets, which are different numbers (ribs are safe at 145°F but are cooked to about 203°F to be tender).
